The Exchange Product Group recommends that Office 365 Exchange Online customers utilize the new “Parallel Migration” functionality when migrating their Public Folders.
If you are going to be a 'cloud only' deployment, with no Directory Sync or any other on premise tie ins, there is not much else you need to be aware of, other then setting up the target Office 365 tenant, setup users, add the domain, license them, migrate the data and then during a maintenance window, pull the trigger on DNS. This would mostly involve ensuring Outlook/ActiveSync properly reconfigures and any user issues that arise. The entire migration process should take 4-8 hours and whatever setup issues you may have. While this is not directly related, it has some useful information about transitioning to an Office 365 tenant. I agree with David949, Migration Wiz or AppRiver have utilities which can migrate the user data for you and they are relatively simple to use.
